This is a plain, home-style toor dal finished with a tempering of cumin and garlic. Moringa leaf powder is added at the end of cooking. Serves 3–4.
Ingredients
- ¾ cup toor dal
- 1 tomato, chopped
- ¼ teaspoon turmeric powder
- Salt to taste
- 1–2 teaspoons moringa leaf powder
- 1 tablespoon ghee or oil
- 1 teaspoon cumin seeds
- 3 cloves garlic, sliced
- 1 dried red chilli
- A pinch of asafoetida (hing)
- Fresh coriander to garnish
Method
- Rinse the dal and pressure-cook it with the tomato, turmeric and about 2 cups of water until soft.
- Mash lightly, add salt and simmer, adding water to reach the consistency you like.
- Turn off the heat and stir in the moringa leaf powder.
- For the tempering, heat the ghee or oil, add the cumin seeds and let them splutter, then add the garlic, red chilli and asafoetida.
- Pour the tempering over the dal, garnish with coriander and serve with rice or roti.
Tips
- Stirring the powder in after cooking keeps its colour bright.
- Start with a small amount the first time and adjust to your family's taste.
